Too busy for your weekend's party? Try this easy no-recipe ribs.
My go-to menu when I know my weekend will be busy but still want to throw a good party with family & friends anyway. You can cook bunch of them and save leftovers for few more days. Normally, never have any leftovers though. I always get a pack of rib from Costco, about $30 for 3 racks...not bad. It only takes some preparation on homemade rubs (check it off if you use store bought, it's up to you) & lay out aluminum foil on a baking tray. For quick & easy I use oven instead of grill.
Heat the oven up to 400 F., in the meantime mix up your favorite spices rubs & rub them all over your ribs. I normally mixed up kosher salt, black pepper, cyan pepper, smoked paprika, garlic powder with a pinch of turmeric & ginger powder. Lay them on prepared baking tray with the meat side up on middle rack. Roasted for about 15 - 20 minutes before turn down to 300 F. for another 2 1/2 hours (in case you not on a rush, goes down to 250 F. for about 3 hours). During the last 1/2 hour of roasting, brush on your favorite bbq sauce all over. Remember that cooking time depends on the size & quantity of what you put in your oven at a time. Temperature of each oven varies. What I setup here is for guidance only.
When cooked through, take out from oven & let stand for 5 minutes before cut in sections. I like to brush with extra bbq sauce & put them back in the oven (turned off but still very hot) to dry a bit more. Cooking with the oven gives you free time (& hands) to do other things at the same time. Adding some roasted corn & salad...umm...great meal!
Let others prepare for the drinks or table setting. Most of the time when get people to participate will make them enjoy the meal better. It's a little activity to spend quality time together.
Don't let limited time make you not eat well or skip spending time together with friends & family. You just have to be creative and plan well. Ask for help when you need to, the result would be great. Cheers to the healthy you!
